Aside from suggestions as to which equipment is best on board a m/c....
Which track orgs DO NOT allow any on board recording of sessions?

I have never had an issue.
That was with:

NESBA
Fireblades.org days
Ohlins day
Curvechasers
CycleOptions
Though I have the wires tucked up under and it is hard to even notice the cam.
If everything tastes like chicken..... what does chicken taste like
